Mocktail Virgin Margaritas

Happy Cinco de Mayo! I know I know, Many of us our thinking about eating tacos, quesadillas, and having some drinks but just a little history, Cinco de Mayo celebrates Mexico's victory over the French during the Battle of Puebla. Not only is it an opportunity to celebrate the Mexican culture, it's also a free pass to engage in some mexican cuisine and some Margaritas!!!! If you want to have a margarita but you don't want the alcohol and you want to make it all inclusive for your kids then I encourage you to make these easy frozen mocktail strawberry margaritas.

Sometimes, you want the flavor of a cocktail but you dont want the alcohol. Maybe you just don't drink, or maybe you want to include your kids in on all the Cinco de Mayo festivities. Whatever the reason, this Mocktail Virgin Margarita will be a hit! While being quarantined, I have really made an effort to get in my creative bag and think of ways to keep my children occupied, engaged, and make the time at home fun for them the best that I can. So, I thought to myself, lets make some kid friendly ice cold drinks, grab some cool looking cups and some fruit and see how this goes. Have you wondered how to make a virgin margarita? It's really easy to make it fresh. Sure, you can use the non-alcoholic margarita mix and add some club soda but where's the fun in that?!?! So I opted for making it from scratch.

How To Make The Perfect Virgin Margarita:

1/3 Cup of Sugar (you can substitute with agave/stevia)

2 Cups of fresh strawberries

(2) small cans of Lemon-Lime Soda

2 tablespoons lemon juice

1 1/2-2 cups of Ice

Pineapple and Strawberries for garnish

Instructions:
  • Prepare the margarita glasses. (the cups pictured were from the dollar store) add sugar to a shallow bowl. We the cup or glass rims with a lemon wedge and press the glass top in the sugar to coat rim
  • Place the chopped strawberries, lemon juice, lemon-lime soda, sugar, and ice into your blender.
  • Garnish each drink with a fresh strawberry and pineapple (any fruit of your choice) on top, slice them half through lengthwise from the bottom and place one on the rime of each glass or cup right before serving.
  • Enjoy!
